Bodega Chopped Cheese… Reinvented 🔥 New Yorkers know: the bodega chopped cheese is iconic. It’s the late-night, post-everything, grab-it-on-the-go sandwich that never misses. Back when I lived in my tiny NoLita apartment, I’d step onto the fire escape, shout my order across the street, and by the time I hit the sidewalk, my sandwich was already waiting.
When I was creating my cookbook, the bodega chopped cheese had to make the cut—just reimagined. I swapped the beef for TVP (textured vegetable protein) to keep that iconic chopped texture while packing in 30g of plant-based protein. Savory, melty, messy in the best way—and still light, flavorful, and fully vegan.

.WHAT I’M EMPHASIZING.
The Power of Cross-Training 💪 If you want to feel strong, energized, and in it for the long game, cross-training matters. Mixing different types of movement helps you avoid burnout, reduce injury risk, and build a body that’s ready for whatever life throws your way. Here’s what a well-rounded cross-training routine looks like:
CARDIO: This is your heart-health foundation. Walking, hiking, running, cycling—even marching in place counts. Aim for a few hours a week. “Don’t have time?” Sneak cardio into daily life: take the stairs, park farther away, bike to work.
STRENGTH: Strength training IS the fountain of youth and critical for longevity. Think full-body moves that build muscle and support everyday life—rows, squats, and core work. At least two days a week goes a long way.
MOBILITY: Mobility keeps your joints happy and your movement smooth. It’s key for injury prevention and helps you move better in every workout.
RECOVERY & STRETCHING: Recovery is part of the work. Stretching and foam rolling help your body reset, rebuild, and come back stronger. This can be as simple as rolling on the floor while watching TV or adding 10 minutes of stretching to the end of a run or workout.
Start where you are. Three workouts a week is a great goal—and they don’t need to be long. Before you know it, you’ve built a routine that supports your body from every angle.

Question: I’m thinking about starting 3for31 now. Is it too late? And does walking count?
Answer: It is never too late to start. 3for31 is about consistency and showing up for yourself—wherever you are. You don’t need a perfect start date. Just start now and commit to your own 31 days.
And yes—walking 100% counts. The goal is 30 minutes of movement, period. Some days that might be a run or a strength workout. Other days it’s a walk around the block, mobility work, stretching, or dancing it out in your kitchen.
