The Summer of Swagger kicks off TODAY ā˜€ļø I’ve always felt like summer invites change. The longer days, the energy, the vibes — it’s the perfect time to shake things up. That’s why I created the Summer of Swagger: a seasonal challenge designed to help you get intentional, try new things, and connect more deeply with yourself and your community.

For our second Summer of Swagger, we’re turning up the volume with a 6-week challenge built to push your comfort zones and level up. Who’s joining me?

 .WHAT I’M BAKING. 

4th of July Treats šŸ‡ŗšŸ‡ø I made this patriotic cake last year for our 4th of July celebration—and it was such a hit, I’m running it back. A simple vegan vanilla base, layered with cream cheese frosting and fresh berries. It’s light, easy to pull together, and you can change the toppings to fit any occasion. Give it a try and let me know how you remix yours.

Ingredients:

Vanilla Cake

  • 1 1/3 cups almond milk, unsweetened

  • 1 tablespoon apple cider vinegar

  • 1/3 cup canola oil or melted coconut oil

  • 1 cup sugar (I like coconut sugar)

  • 2 teaspoons pure vanilla extract

  • 2 1/4 cups all-purpose flour (I used almond flour)

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

Vegan Cream Cheese Frosting

  • 1 container of vegan cream cheese (1 cup)

  • 1/2 cup vegan butter, softened at room temperature (I used Earth Balance)

  • 2 tablespoons of liquid sweetener

  • 1/3 cup brown sugar

Other

  • 1 cup fresh blueberries

  • 2 cups sliced strawberries or raspberries

Instructions

For the Vanilla Cake:

  • Preheat the oven to 350 degrees and lightly grease a cake pan.

  • In a large bowl, whisk together the almond milk and vinegar. Let sit for 1 minute to curdle. Then add the oil, sugar, and vanilla. Whisk to combine.

  • Measure the flour and add it on top of the wet mixture. Sprinkle on the baking powder and salt. Mix with a wooden spoon until the batter is smooth.

  • Pour the batter into the prepared cake pan. Bake for about 30 minutes, or until a fork comes out clean and the cake is just a little golden on top.

  • I pour on the frosting right when it comes out of the oven for a strawberry shortcake vibe. You could also let the cake cool and use a thicker frosting or even whipped cream for a topping.

For the Vegan Cream Cheese Frosting:

  • In the same bowl you used for the cake, add the softened vegan butter and vegan cream cheese. Mix until creamy, smooth, and well combined. I don't have a mixer (LOL), so I mixed by hand. Definitely recommend using a mixer.

  • Add the sugar until spreadable and to the amount of sweetness you like. Store in the fridge until you are ready to frost the cake.

Assembling the Cake:

  • Pour the frosting on top.

  • Create your berry design and enjoy!

Question: After a race doesn’t go your way, after putting in SO MUCH time (14 weeks) and effort, how do you pick yourself up and continue to speak kindly to yourself?

Answer: Whew. I’ve been there. After pouring your heart into training, it’s tough when race day doesn’t reflect the hustle. First: feel what you need to feel. You’re not weak for being disappointed—you’re human. But then, I remind myself: one race doesn’t define the journey. Fourteen weeks of discipline, early mornings, strength sessions, mindset work? That doesn’t disappear because of one day. That’s still your power.

When the inner critic gets loud, I get even louder with compassion. I talk to myself like I would talk to my daughter: with truth, love, and respect.

One finish line doesn’t get the final word. You do.
