 .WHAT Iā€™M EATING. 

A classic BLT with a plant-based twist. šŸ„Ŗ Enter the TLT (Tempeh, Lettuce & Tomato). Tempeh is a powerhouse ingredient with 18 grams of protein per serving and takes on the flavor of whatever marinade you choose. Short on time? Pre-marinated tempeh from the grocery store makes this even easier. I love a good sandwich that hits all the marksā€”protein, carbs, and straight-up deliciousness. This is it. Ready to stack it up? Letā€™s go!

Ingredients:

Tempeh 

  • 1 (8-ounce) package tempeh

  • 2 tablespoons tamari (or soy sauce or aminos)

  • 1 tablespoon maple syrup (I used RxSugar)

  • Ā¾ teaspoon smoked paprika

  • Ā¼ teaspoon ground cumin

Cashew Sour Cream

  • 1 cup cashews (ideally soaked for 1-3 hours, but I soaked mine for 10 mins and it was still great šŸ˜)

  • 1 tablespoon apple cider vinegar

  • Ā¾ teaspoon Dijon mustard

  • Ā¼ teaspoon salt

  • Ā½ cup water

Sandwich

  • 1 beefsteak tomato sliced

  • 1 head leafy green lettuce

  • 1 avocado, sliced

  • Bread of choice (sourdough is my fave!)

Instructions 

  • Prep the Tempeh: Slice the tempeh into thin, even stripsā€”around Ā½ to Ā¾ inch thick. In a shallow dish, whisk together tamari, maple syrup, smoked paprika, and cumin for a marinade that brings smoky-sweet vibes. Lay the tempeh slices in the dish, making sure theyā€™re fully coated, and let them soak for 15 minutes, flipping halfway through.

  • Cook the Tempeh: Heat up a large nonstick sautĆ© pan over medium heat. Lay the marinated tempeh strips in a single layer and cook for 2-3 minutes on each side, letting them crisp up and caramelize. Youā€™re looking for golden perfection. Set aside when done.

  • Make the Cashew Sour Cream: Drain the soaked cashews and toss them in a blender with apple cider vinegar, Dijon mustard, salt, and water. Blend until smooth. Need a thinner consistency? Add a splash more water.

  • Assemble the TLT: Time to stack this sandwich with swagger. Toast your bread and slather each slice with a thick layer of cashew sour cream. Layer it up: lettuce, creamy avocado, crispy tempeh, and juicy tomato slices. Top with the second slice of bread and enjoy!
