I’ve been cooking up something fun lately—literally. 👀
I’ve been diving back into the recipes I’ve shared over the past year, revisiting the meals that keep me fueled and fired up. This newsletter’s a little different—I’m hitting rewind and highlighting some of my favorite go-to recipes. From quick eats to power-packed meals, these dishes have been in heavy rotation for me.

.HUSTLE APPROVED BITES.
The Easiest Sandwich. This sandwich is one of my all-time favorites – it's packed with veggies and protein, plus it tastes 🔥. It's the perfect meal or snack. Here's my go-to recipe, but let me know how you make it your own!
Toast a slice of sourdough bread or heavy, whole grain bread until golden brown and crisp.
Drizzle 1 tbsp of extra virgin olive oil and 1 tbsp of balsamic vinegar on the bread.
Spread a few tbsp of mashed chickpeas onto the bread. Then, sprinkle with a pinch of salt and a pinch of oregano for added flavor.
Layer on chopped onion, mint leaves, and either parsley or microgreens for a burst of freshness and crunch.
Squeeze the juice from half a tomato over the sandwich and add sliced tomato pieces on top.
Add another slice of toasted bread on top, and enjoy! 🥪
Chickpea Protein Wraps 🌯 As y’all know, I always travel with #pursesnacks. One of my favorites for a longer trip is a chickpea and protein-filled wrap. It’s bangin’ and simple. Here’s all you need:
In a large bowl, throw together sturdy veggies that can hold up to being out of the fridge. I used romaine, cabbage and cucumbers.
Add in chickpeas, yogurt, crunchy mung beans, basil, black pepper, and Green Goddess seasoning from Trader Joe’s.
Use a piece of romaine as a layer in the tortilla to absorb any moisture from the yogurt or chickpeas, so the tortillas don’t break in transit.
Place the chickpea salad mixture onto your lettuce and wrap it up!
**Pro tip: Use the bag from the tortillas as the transport (my abuela would be proud)! Throw in some napkins and you’re ready to go.
.MEAL PREP MVPS
Vegan “Chicken” Nuggets. 🍗 This is my go-to vegan nugget recipe. I love to make a big batch and store them in my fridge for the week. They’re incredibly versatile — perfect for tossing into wraps, mixing into salads, or dipping into your favorite sauce. These nuggets are a staple protein in my kitchen, fueling my busy days with plant-powered nutrition! Try out the recipe and let me know what you think. ⬇️
Ingredients
1/2 cup vital wheat gluten
6 ounces of vegetable stock (or water if no veggie stock)
150 grams lupini beans (or cooked chickpeas)
1 1/2 tsp poultry seasoning
2 tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
2 tsp liquid smoke
Dipping sauce (bbq, ranch, hot sauce)
Instructions
Preheat your oven to 350Âş. Line baking dish with parchment paper.
Add beans, seasonings and vegetable stock in a blender. Blend until smooth.
Add vital wheat gluten and dry seasonings in a large bowl.
Fold the wet ingredients into the bowl with a spatula. You can also use your hands to gently press the dough together.
Once a dough forms, tear or use kitchen shears to shape into bite-sized pieces. Roll them in your hands until the shape resembles a nugget.
Cover and cook for 20 minutes in a baking dish at 350Âş.
Uncover and cook for 15-20 more minutes at 425Âş or until brown.
Serve with dipping sauce and enjoy!
.POWERHOUSE COMFORT FOOD.
Simple Sloppy Joes 🍔 Who doesn't love a good Sloppy Joe? This one's super easy and perfect when you need something quick and nutritious. Packed with plant-based goodness, this recipe is on repeat in my kitchen. ⬇️
Ingredients:
Onions
Mushrooms
Lentils
Ground “beef”
Sloppy Joe sauce (I used the Noble Made Less Sugar Sloppy Joe Skillet Sauce)
Protein bagel
Vegan cheese
Nutritional yeast
Instructions:
Throw onions, mushrooms, lentils, and ground “beef” into a pan. Sauté until everything is cooked through.
Add in Sloppy Joe sauce and mix well.
Toast a protein bagel and pile on the sloppy joe mix.
Top with melted vegan cheese and a sprinkle of nutritional yeast.
Enjoy!

.SATISFYING SWEET TREATS .
Chickpea Cookie Dough 🍪 I'm obsessed with this vegan cookie dough recipe. It’s full of simple, powerful ingredients like chickpeas and nut butter. It's perfect for a quick bite between workouts or a sweet treat to share with your fam. Let me know if you like it! ⬇️
Ingredients:
1 (15-ounce) can reduced sodium chickpeas, rinsed and drained
1/4 cup creamy peanut butter or your favorite nut butter
1/4 cup rolled oats or quick cooking oats
1/4 teaspoon ground cinnamon
1/4 teaspoon baking powder (only if you're baking the dough)
1/4 teaspoon sea salt
1/4 cup pure maple syrup
1 tablespoon vanilla extract
1/3 cup chocolate chips
For No-Bake Dough:
Load up your food processor with all the ingredients—chickpeas, nut butter, oats, cinnamon, salt, maple syrup, and vanilla. Blitz until you’ve got a smooth, creamy mix.
Transfer the dough to a mixing bowl. Fold in the chocolate chips. (You can try to mix them directly in the food processor bowl, but I find using a separate bowl is easier and more effective in the end).
Scoop your dough into an airtight container and freeze for 60-90 minutes. This is where patience pays off—wait for it to set to get the best texture.
To Bake into Cookies:
Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone baking mat.
Scoop the dough. Small cookies work best. I used a small cookie scoop to make cookies that were each about 2 tablespoons of dough and 1 1/2 inches apart.
Bake for 10 minutes. Then, let the cookies rest on the sheet for 5 minutes, before transferring them to a wire rack to cool completely.
