.WHAT I’M COOKING.
Tofu Black Bean Tacos with Katie Couric. I had the best time cooking (and dancing 💃 ) in Katie's kitchen. She's been trying to eat less meat, so I showed her one of my favorite protein-packed recipes. Scrambled tofu black bean tacos are super simple and delicious. Tofu is a great base because it really absorbs whatever flavors you add into the mix. Below is the recipe we made, but feel free to spice it up however you'd like!
Start by squeezing the moisture out of the tofu using your hands. Wrap the tofu in a clean cloth and place a weight on top of the wrapped tofu and set it aside.
Heat 1 tablespoon of neutral oil in a pan. Add diced red onion, adobo seasoning and black beans.
Crumble the tofu with your hands and add to the pan. Mix thoroughly with the bean and onion mixture. Add sazon seasoning.
Add turmeric, garlic powder, chili powder, cumin, nutritional yeast (for some cheesy notes 🧀 ), marmite and salt. Sauté until thoroughly seasoned and mixed.
Spoon the tofu black bean mixture onto cooked corn tortillas. Add cilantro, avocado, coconut yogurt, salsa, pomegranate arils, and a squeeze of lime to taste.

.WHAT I’M LOVING.
A new morning ritual. As y’all know, I don't drink coffee. I've tried lots of coffee alternatives, but they just don't do it for me. .WHAT I’M REFLECTING ON.
10 year since my T1D diagnosis. This February marks 10 years since I was diagnosed with type 1 diabetes. Wow – what a journey it’s been. Thanks to my superhero Mom, I was able to get to a doctor before I went into a crisis situation, which is actually the reality for a lot of other people at the time of their diagnosis. I had to learn quickly how to manage my disease, but was eventually able to own my power and health. Now, insulin is another tool in my superhero toolkit 🦸♀️ You can own your power too by getting informed and taking action to screen for type 1 diabetes early.
