To celebrate the countdown, I wanted to share my go-to Super Bowl appetizer: a Healthy 7-Layer Dip—but make it plant-based and protein-forward. It’s creamy, smoky, fresh, and always the first thing to disappear at the table. This year, it was made with my cute, special helper 😊 

(no blueberries were used in this dip šŸ˜…)

Ingredients

  • 1 (15-oz) can black beans, rinsed and drained

  • 1/4 cup Kite Hill unsweetened yogurt

  • 3 cloves garlic, divided

  • Juice of 2 limes

  • 1 teaspoon cumin, divided

  • 1 teaspoon smoked paprika

  • 1 jalapeƱo, seeded

  • 1 (15-oz) can yellow corn, drained and rinsed

  • 1 chipotle pepper in adobo, finely minced

  • 2 packages (200 g total) silken tofu

  • 1/8 teaspoon sugar

  • 3 bell peppers (red, orange, yellow), diced

  • 1/2 cup salsa

  • 3 medium tomatoes, diced

  • 2 ripe avocados

  • 1–2 tablespoons Kite Hill unsweetened yogurt (for avocado layer)

  • Sliced green onions

  • Sliced jalapeƱos

Directions

Step 1. Black bean base

  • Blend until smooth: Black beans, 1/4 cup Kite Hill yogurt, 2 cloves garlic, Lime juice, 1/2 teaspoon cumin, Smoked paprika, JalapeƱo

  • Spread evenly in the bottom of a shallow serving dish. Rinse blender.

Step 2. Corn layer

  • Evenly sprinkle the corn over the black bean layer.

Step 3. Creamy chipotle tofu layer

  • In a bowl, mash and stir until smooth: Silken tofu, Minced chipotle pepper, 1 clove garlic, Sugar

  • Season with salt if needed and gently spread over the corn.

Step 4. Bell pepper layer

  • Scatter diced bell peppers evenly over the tofu layer.

Step 5. Salsa and tomato layer

  • Pour salsa evenly over the peppers, then scatter diced tomatoes on top.

Step 6. Avocado layer

  • Mash until creamy: Avocados, Remaining 1/2 teaspoon cumin, 1–2 tablespoons Kite Hill yogurt (as needed)

  • Carefully spread over the tomato layer.

Step 7. Garnish

  • Top with sliced green onions and sliced jalapeƱos.

  • Optional but recommended: Chill for 30–60 minutes before serving so the layers set and the flavors really come together.

 .WHAT I’M REMINDING Y’ALL. 

Self-Love is NOT Selfish šŸ’— I cherish the idea that you should befriend yourself before considering romantic love, friendships, or partnerships in the world. With Valentine’s Day coming up, I like to remind myself that self-love is the foundation for every relationship we will have in our lives. If we don't feel good within our own bones or the conversation between our ears doesn’t feel productive, healthy, and kind, then it will be difficult to engage in love with the world.

If you're struggling to reach a place of self-love or need to guide yourself back to a healthy conversation, journaling can be a helpful tool. Here are some prompts you can answer this week. ā¬‡ļø

  • What are 3 things that make you feel JOY?

  • What personality trait do you love about yourself?

  • What is a characteristic that makes you unique?

  • Which relationships in your life are exhausting? Are you giving too much to someone and not receiving the same in return?

  • How can you make yourself a priority today?

Question: When you are going hard, working out, eating well, then your period hits or you slam into perimenopause, start to feel sluggish, tired and unmotivated. How do you get over the hump? Answer: I listen to my body first. That might mean taking a full rest day or dialing back my weights and paces, but I keep my routine intact. Intensity is always adjustable—consistency is what keeps me grounded. I also prioritize recovery and don’t push through symptoms that need attention. And when it comes to hormones or ongoing fatigue, I always recommend checking in with a doctor so you’re getting support that’s right for your body.
