Women’s History Month. I'm inspired by badass women. Women who embody strength, use their work for good, and refuse to apologize for their greatness. This March, I am taking time to honor women's contributions in history and appreciate the women making an impact today.

.WHAT I’M COOKING.
Hummus Crunch Salad 🥗 A protein and veggie-packed salad is one of my favorite ways to fuel. At Sweetgreen, I love the Hummus Crunch Salad. In the Royal Kitchen, I put my own spin on it. I keep it simple and get creative with whatever's on-hand. Try it out! ⬇️
Start by destemming the kale and tossing it into a large bowl. Here's the trick - be sure to massage the kale. Not only does it enhance the flavor, but it also aids digestion. Add olive oil, lemon, salt, pepper, and a generous sprinkle of nutritional yeast!
Next, add romaine, cabbage, olives, onions, cucumbers, tomatoes, and a handful of goji berries.
Time to bring in the protein. I opted for tempeh this time, but I always switch it up based on what's available in my kitchen. Toss in chickpeas and mung beans for additional protein and added crunch.
Sprinkle in some Trader Joe's Green Goddess seasoning and nutritional yeast to taste.
Mix it up and enjoy!

The She Pivots Podcast. As part of my Women's History Month celebration, I'm delving into the stories of incredible women. She Pivots is a weekly podcast by iHeartPodcasts that spotlights real-life experiences of women who have shown that pivoting is possible and success is not defined by a one-size-fits-all formula.💪
Recently, host and creator Emily Tisch Sussman led a session with the Tory Burch foundation on career pivots and how to use your previous or current career to write your next chapter. Check out the recording for three essential tips: defining your north star, determining your bandwidth, and building your kitchen cabinet.
Last year I sat down with Emily to talk about pivoting, resilience and persistence in front of a live audience in NYC.
Question: From mom to mom, what are your favorite super foods to help keep you going all day? I have an 18 month baby boy that is full of energy (I love every minute) but I get drained sometimes and want to keep up with him.
Answer: Maintaining energy throughout the day is crucial for a busy mom, and I can totally relate to those moments of feeling drained! Here are some superfoods and strategies that have been game-changers for me:
- I start the day with a nutrient-packed smoothie, loaded with plant-based proteins, magnesium, and lots of superfoods (fruit, kale or spinach, chia seeds, and nut-butters).
- Prioritizing my protein intake is a key focus. I aim for 1 gram of protein per pound of body weight. I love filling a protein tortilla with beans, nuts, seeds, legumes, tofu, and tons of veggies.
- I prepare meals in batches. If you don’t mind repeating meals and snacks, this makes it easy to grab healthy options throughout the daily chaos.
Overall, listening to your body is crucial. Pay attention to what you eat, when you eat it, and how you feel after consuming it.
