1β£ Preheat the oven to 450Β°F. Line a rimmed baking sheet with parchment paper. Arrange the tempeh (8 oz) and mushrooms (3.5 oz container) on the baking sheet.
2β£ In a small bowl, whisk together 3 tablespoons coconut aminos, 2 tablespoons vegetable oil, and Β½ teaspoon liquid smoke (if using). Spoon over the tempeh and mushrooms and toss to coat.
3β£ Bake until the mushrooms are crisp and browned and the tempeh is charred around the edges, 10β15 minutes, rotating the baking sheet halfway through. Finish with a pinch of salt and a few cracks of black pepper.
4β£ Build your salad: start with 4 cups spinach, then add black beans, tomatoes, corn, carrots, cucumbers, onion, and avocado. Top with the mushrooms and tempeh, then drizzle generously with tofu ranch dressing.
Itβs not magic. Itβs mushrooms!

Meal prep instead of takeout π₯ I carve out time on Sunday to prep a few proteins and veggies for the week. It makes the healthy choice the easy choice when things get busy later.
Starting the day with intention instead of reaction β Wake up a little earlier than you need to (when you canβ¦ I know it can be hard with little kids). Read, journal, or move before opening your inbox. It shifts the tone of your entire day.
Earlier wind-down instead of late-night TV π Even 15β20 minutes earlier makes a difference. Better sleep = better everything.
Prep the night before instead of rushing in the morning π§³ Outfit, bag, mealsβsetting it up ahead of time makes mornings feel calmer and more in control.
